Growing conditions and climate:
The grapes that went into this wine were harvested in a small, unique plot in the high mountain region around Jerusalem.
The vines in this plot are densely planted in rocky limestone soil rich in quartz and other mineral deposits. The vines are planted from south to north, in the direction of the mountain’s moderate slope, which enables good rainwater drainage. In winter the region is rainy with periodic snowfalls. It is characterized by low night temperatures and low humidity levels that allow for healthy ripening and produces fruit with optimal chemical components without the risk of damage from pests and diseases.
Wine Production process:
The grapes were handpicked during the night in August 2010 under light provided by head lamps and delivered in small crates to the winery. The grape bunches were placed in a pneumatic press for gentle pressing. The free-run juice only was clarified and after 48 hours the clear juice was transferred to a tank for long, slow fermentation. The wine was aged for a short period on its sediment before undergoing filtering and bottling.
Tasting notes:
A crisp, clear and profusely aromatic wine with a refreshing character of fresh citrus and minerals typical of Chardonnay wines produced by this method. The wine’s unique character renders it drinkable immediately, but it will continue to age in the bottle for several years, developing a more mature floral character. A good accompaniment for Far Eastern dishes, fish and roasted or herb-baked chicken.
