Winemaking Process
Each grape variety is harvested separately after nightfall. After destemming, the grapes are cold soaked and then begin alcoholic fermentation lasting approximately one week. After brief stabilization, part of the wine is aged in stainless steel tanks and the remainder is transferred to oak barrels for several months of aging to enhance the flavors and complexity. The final blend is comprised of 50% Cabernet Sauvignon from vineyards in the Golan Heights and 50% Merlot from vineyards in the Lachish region.
