Winemaking Process

Each grape variety is harvested separately after nightfall. After destemming, the grapes are cold soaked and then begin alcoholic fermentation lasting approximately one week. After brief stabilization, part of the wine is aged in stainless steel tanks and the remainder is transferred to oak barrels for several months of aging to enhance the flavors and complexity. The final blend is comprised of 50% Cabernet Sauvignon from vineyards in the Golan Heights and 50% Merlot from vineyards in the Lachish region.

Tasting Notes

Yogev Cabernet Sauvignon-Merlot is made for drinking now, with mild herb and red and black fruit on the nose. The palate encounters a well-balanced, rich wine with medium body, and notes of blackberry, plum and chassis are supported by oak, giving the wine a soft silky palate. With proper storage conditions, the wine can age well for up to four or five years, but is best when enjoyed young.
