Dry White Wine

The Jasper demonstrates a novel and harmonious blend of Chardonnay and Chenin Blanc grapes, harvested in vineyards in the Upper Galilee, with the addition of Viognier grapes originating in a tiny but superb vineyard located in the northern Negev.

The wine is fermented and aged in oak barrels, with a small amount being fermented in stainless steel tanks to deepen its complexity.

Winemaking Process

Each variety is harvested separately at optimal ripeness and is transported to the winery in refrigerated trucks as cool cargo in small crates. The grapes are whole bunch pressed in order to preserve the fruit’s most subtle characteristics. Following 24 hours of natural stabilization, the clear juice is transferred for alcoholic fermentation at low temperatures.. Each variety seperatley aged for another 6 months in oak barrels before bottling.

The Jasper is an extraordinary inspiration of three components merging to form one immensely complex wine. The Chardonnay imparts structure, grape intensity and a character of white fruit; the Chenin Blanc contributes a fresh, lemon-citrus tang with a suggestion of exotic fruit; and the Viognier confers traces of delicate peaches and ripe apricots with a floral flair.
