Winemaking Process
The Gewurztraminer and Muscat Canelli grapes are the first grapes to be harvested right at the start of harvest season, while the Sauvignon Blanc grapes arrive at the winery a little later. Each variety is pressed promptly upon arrival at the winery in order to obtain the finest quality juice. All the grapes undergo natural clarification before being transferred for a slow, cold alcoholic fermentation in order to preserve their respective refreshing aromas. The wine is transferred again, this time to stainless steel tanks, for an additional brief period of aging, with no oak contact whatsoever, after which the final wine blend is selected and the wine is bottled.
