Sheba Sauvignon Blanc
This wine originates from Ben Zimra vineyard, situated on terraced slopes in the Upper Galilee. The soil is a mix of terra rossa and hard limestone. The region is known for its cool nights, hot summer days, and low humidity—ideal for a long and gradual ripening process that enhances the grapes’ aromatic and flavor components.

The grapes were hand-harvested in the early morning and brought to the winery in small bins. They were gently pressed, and the juice underwent natural settling overnight. Fermentation took place at low temperatures in stainless steel tanks, preserving the varietal’s herbaceous and fruity character. A portion of the must was also fermented in seasoned French acacia and oak barrels to add depth. The wines were then blended, stabilized, filtered, and bottled.
This Sauvignon Blanc is fresh and vibrant, with clean aromas of white peach, citrus, tropical fruit, and pronounced herbaceousness. Elegant and refreshing on the palate.
It pairs well with seafood, aged goat cheese, and vegetable quiches. Best served chilled, at 10–12°C.
