Sheba Merlot
The grapes were sourced from vineyards in the Upper Galilee, characterized by a mix of basaltic soil and terra rossa, providing excellent aeration for the root system. The region enjoys a cool climate with warm days and cold nights during the summer, and low humidity levels—conditions that support long ripening and the development of intense flavors, aromas, and color in the grapes.

Grapes were night-harvested at optimal ripeness. After destemming, they were transferred to small and medium-sized fermentation tanks (5–12 tons) for maceration and fermentation. The wine remained on its skins for 2.5 to 3 weeks, then underwent gentle pressing, followed by malolactic fermentation and light clarification. It was then aged in French and American oak barrels, about a quarter of which were new. The final blend was composed from multiple vineyard blocks, with minimal filtration before bottling.
This Merlot displays restrained ripeness and a balance between freshness and concentration. The soil and maturation conditions produced grapes with deep color, rich aromas, and complex flavors. Crop thinning in selected plots helped refine the final balance. The wine presents deep red color and intense aromas of red raspberry, ripe plum, sweet spices, with subtle notes of chocolate and roasted coffee. It has a full-bodied structure, blending freshness with ripeness, and finishes with lingering, aromatic dark fruit, spices, and a touch of minerality.
