The grapes are harvested during the night at optimize grape ripeness to ensure the accumulation of rich grape aromas while maintaining a refreshing character. When the grapes arrive to the winery they are immediately destemmed and softly pressed. After the must clarification, the liquid is fermented at a low temperature in stainless steel tanks and French and American oak barrels. At the end of the alcoholic and malolactic fermentation the wine from the barrels and tank is blended to form the final blend.
Fermentation in new and used barrels as well as in stainless steel tanks, combined with the fact that only part of the wine undergoes malolactic fermentation, results in a complex wine with a booming medley of aromas and flavors. The wine is approachable in its youth, but has the potential to develop depth and complexity over the next few years. The wine has a shade of golden yellow with an exceptionally rich aroma. The palate distinguishes complex and distinct flavors of refreshing citrus, peach, ripe melon and vanilla with an elegant, multi-layered textural balance. It is rounded off with a long and satisfying finish.
