A clean, precise nose showing white peach, citrus, exotic fruit and pronounced herbaceous notes. The palate is elegant, fresh, and vibrant. An excellent match for fish dishes, aged goat cheeses, and vegetable quiches. Serve well-chilled at 10–12°C.

The grapes were hand-harvested in the early morning into small bins. Upon arrival at the winery, they were gently pressed, and the must underwent natural settling overnight. Fermentation took place at low temperatures in stainless-steel tanks, preserving the Sauvignon Blanc’s signature grassy and fruity aromas.
A portion of the clarified must was fermented in French oak and acacia barrels. Following fermentation, the wine was racked from the barrels and blended with the tank-fermented portion to create the final cuvée. It was then stabilized, filtered, and bottled.

Located in the Upper Galilee, the Ben Zimra Vineyard is planted on terraced slopes along a mountainside. The parcel is characterized by terra rossa soil and hard limestone. The region enjoys a cool climate, with warm days and crisp nights during summer, combined with low humidity. These conditions promote a prolonged ripening period and optimal development of the grape’s aromatic and flavor compounds.
